  • 2 tbsp butter
  • 2 boneless, skinless chicken breasts (or 2 cups rotisserie chicken)
  • 1 tsp Italian seasoning
  • 2½ cups chicken broth
  • 1¼ cups uncooked white long-grain rice
  • 2 cups fresh broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat your oven to 350°F (175°C). Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper.
  2. In a large pot, melt butter over medium heat. Cook the seasoned chicken for about 5 minutes until golden brown. Remove from pot.
  3. In the same pot, combine chicken broth, olive oil, and rice; bring to a boil. Reduce heat and simmer for 6 minutes. Add broccoli; cover and cook for another 9 minutes until rice is tender.
  4. Stir in cooked chicken, cream of chicken soup, milk, sour cream, optional seasonings, and half of the cheddar cheese until combined.
  5. Transfer mixture to a greased casserole dish. Top with remaining cheese and cover with foil. Bake for 15 minutes.
  6. Mix melted butter with crushed Ritz crackers; sprinkle over casserole and bake uncovered for an additional 10 minutes until golden.
