- 2 boneless, skinless chicken breasts (or 2 cups rotisserie chicken)
- 1 tsp Italian seasoning
- 2½ cups chicken broth
- 1¼ cups uncooked white long-grain rice
- 2 cups fresh broccoli florets
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 cup crushed Ritz crackers
Instructions
- Preheat your oven to 350°F (175°C). Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper.
- In a large pot, melt butter over medium heat. Cook the seasoned chicken for about 5 minutes until golden brown. Remove from pot.
- In the same pot, combine chicken broth, olive oil, and rice; bring to a boil. Reduce heat and simmer for 6 minutes. Add broccoli; cover and cook for another 9 minutes until rice is tender.
- Stir in cooked chicken, cream of chicken soup, milk, sour cream, optional seasonings, and half of the cheddar cheese until combined.
- Transfer mixture to a greased casserole dish. Top with remaining cheese and cover with foil. Bake for 15 minutes.
- Mix melted butter with crushed Ritz crackers; sprinkle over casserole and bake uncovered for an additional 10 minutes until golden.
