- 1/4 cup butter
- 1 medium onion
- 8–10 cloves garlic
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1 cup cheddar cheese
- 1 cup mozzarella cheese
- 3/4 cup Parmesan cheese
Instructions
- Preheat oven to 350°F (175°C).
- Thinly slice the Yukon gold potatoes using a mandoline or sharp knife.
- In a medium saucepan, melt butter over medium heat. Sauté diced onion and minced garlic until soft.
- Stir in flour to form a roux, then gradually add milk and chicken broth while stirring until thickened. Add thyme and salt.
- Remove from heat and mix in cheddar, mozzarella, and Parmesan cheeses.
- Grease a casserole dish and layer sliced potatoes with cheese sauce three times, finishing with sauce on top.
