  • 1 (8 oz) package Neufchatel cheese, cubed
  • 1 ¼ cups corn (fresh or frozen)
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 ½ cups shredded rotisserie chicken
  • Juice from 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large pot over medium-high heat, sauté diced onion in olive oil until softened (about 4 minutes). Add minced garlic and cook for another 30 seconds.
