- 2–3 large burrito-sized tortillas (whole wheat or gluten-free)
- 2 very ripe avocados
- 1/2 cup precooked black beans (rinsed)
- 1/4 cup corn
- 2 tablespoons diced red onion
- Juice of 1/2 lime
- 1 garlic clove (minced)
- 1 teaspoon cumin
- 1/8 teaspoon crushed red pepper
- Handful of chopped cilantro
- Sea salt and cracked pepper to taste
- Olive oil
Instructions
- In a mixing bowl, mash the avocados and mix in garlic, lime juice, salt, pepper, and crushed red pepper.
- Fold in cilantro, black beans, corn, and red onion until well combined.
- Heat olive oil in a skillet over medium heat. Spoon half of the avocado mixture onto one half of each tortilla; fold to close.
- Cook each quesadilla for 2-3 minutes on each side until golden brown.
- Slice into wedges and serve hot with salsa or guacamole.
