  • 2 very ripe avocados
  • 1/2 cup precooked black beans (rinsed)
  • 1/4 cup corn
  • 2 tablespoons diced red onion
  • Juice of 1/2 lime
  • 1 garlic clove (minced)
  • 1 teaspoon cumin
  • 1/8 teaspoon crushed red pepper
  • Handful of chopped cilantro
  • Sea salt and cracked pepper to taste
  • Olive oil

Instructions

  1. In a mixing bowl, mash the avocados and mix in garlic, lime juice, salt, pepper, and crushed red pepper.
  2. Fold in cilantro, black beans, corn, and red onion until well combined.
