  • 400ml dairy-free milk
  • 50g caster sugar
  • 7g active dry yeast
  • 500g plain flour
  • Zest of 2 lemons
  • 80g lemon juice
  • 125g coconut milk (cream only)
  • 125g caster sugar (for curd)
  • 3 tablespoons cornflour

Instructions

  1. Combine dairy-free milk and yeast in a mixing bowl; let sit for 5 minutes.
  2. Melt dairy-free butter and stir into the yeast mixture with caster sugar.
  3. Gradually add flour until dough forms; knead for 5–7 minutes until smooth.
  4. Let the dough rise covered in a warm place for about 30 minutes.
  5. For the filling, whisk coconut cream, sugar, cornflour, lemon juice, zest on medium heat until thickened.
  6. Roll out dough, spread lemon curd on top, roll it up tightly, slice into pieces, and place on a lined baking tray.
  7. Preheat oven to 180°C (350°F) and bake for 20–25 minutes until golden brown.
