Ingredients

  • 2 (5oz) cans of drained tuna
  • 1 medium onion, chopped
  • 1/2 stalk of celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of each slice of bread. Place one slice butter-side down in the skillet.
  4. Scoop about 2 tablespoons of tuna mixture onto the bread and top with another slice of bread (buttered side up).
  5. Grill until golden brown on both sides.
