- 2 (5oz) cans of drained tuna
- 1 medium onion, chopped
- 1/2 stalk of celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil
- 1/3 cup shredded mozzarella cheese
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna, onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Butter one side of each slice of bread. Place one slice butter-side down in the skillet.
- Scoop about 2 tablespoons of tuna mixture onto the bread and top with another slice of bread (buttered side up).
- Grill until golden brown on both sides.
