  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons vegetable oil
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Lime juice
  • Sesame oil

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat. Season chicken with salt and pepper. Cook for 6-7 minutes on each side until golden brown. Remove chicken from skillet.
  2. In the same skillet, sauté garlic and ginger until fragrant. Lower heat, then stir in peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Mix until smooth.
  3. Return chicken to the skillet, coat well with the sauce, and simmer for an additional 5 minutes.
  4. Serve over steamed rice or noodles and garnish with chopped peanuts and cilantro.
