  • 2 cups mashed sweet potatoes
  • 1 cup cocoa powder
  • 1/4 cup coconut flour
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • Chocolate frosting for topping

Instructions

  1. Preheat the oven to 180C/350F and grease a 9 or 10-inch cake pan.
  2. In a food processor, blend dry ingredients (coconut flour, cocoa powder, sugar, baking powder, salt) until combined. Add wet ingredients (mashed sweet potatoes, eggs, maple syrup, coconut oil, vanilla extract) and pulse until smooth.
  3. Pour the batter into the prepared cake pan and bake for 45-50 minutes or until a skewer comes out clean.
  4. Allow the cake to cool completely before frosting with chocolate frosting.
