  • 2 pounds red potatoes (washed & cubed)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons dijon mustard
  • 1 small red onion (finely chopped)
  • 5 crispy cooked bacon strips (crumbled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped dill pickles
  • salt & black pepper (to taste)

Instructions

  1. Cook the red potatoes in a large pot covered with cold water. Bring to a boil over medium-high heat and cook until fork-tender (10–15 minutes). Drain and cool.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, dijon mustard, and apple cider vinegar until creamy.
  3. Add cooled potatoes, red onion, crumbled bacon, shredded cheese, parsley, and dill pickles to the dressing. Gently mix until well combined. Season with salt and pepper to taste.
  4. Cover and refrigerate for at least an hour before serving to allow flavors to meld.
