  • 4 boneless, skinless chicken breasts
  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 1½ cups chopped fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes
  • 2 tablespoons mayonnaise

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Drizzle chicken breasts with olive oil and season with paprika, garlic powder, onion powder, and salt.
  3. Carefully cut pockets into each chicken breast.
  4. In a mixing bowl, combine cream cheese, Parmesan, spinach, minced garlic, red pepper flakes, and remaining salt; mix well.
  5. Stuff each chicken breast pocket with the spinach mixture.
  6. Place stuffed chicken in a greased baking dish and bake for 25-30 minutes until cooked through (internal temperature should reach 165°F).
