- 8 oz Mushrooms (sliced)

- 4 cups Baby Spinach
- 1/4 cup Parmesan Cheese (grated)
- Salt and Black Pepper (to taste)
- Red Pepper Flakes (optional)
- Fresh Parsley (optional, chopped)
Instructions
- Cook orzo according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and cook until browned, about 5–7 minutes.
- Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
- Add baby spinach to the skillet and cook until wilted, about 2–3 minutes.
- Toss the cooked orzo into the skillet, mixing well with mushrooms and spinach.
- Remove from heat, sprinkle with Parmesan cheese, and season with salt and black pepper to taste.
- Garnish with red pepper flakes and parsley if desired, then serve warm.
