  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (or 1 cup frozen spinach)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 cups marinara sauce
  • Salt, pepper, and Italian seasoning to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water until al dente; drain and set aside.
  3. In a mixing bowl, combine ricotta, half mozzarella, Parmesan, egg, spinach, garlic, salt, pepper, and Italian seasoning. Mix well.
  4. Fill each shell with the ricotta-spinach mixture and place them seam-side up in a baking dish coated with marinara sauce.
  5. Pour remaining marinara sauce over the shells and sprinkle with remaining mozzarella.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until golden.
