- 12–15 jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach (or 1 cup frozen spinach)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 2 cups marinara sauce
- Salt, pepper, and Italian seasoning to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells in boiling salted water until al dente; drain and set aside.
- In a mixing bowl, combine ricotta, half mozzarella, Parmesan, egg, spinach, garlic, salt, pepper, and Italian seasoning. Mix well.
- Fill each shell with the ricotta-spinach mixture and place them seam-side up in a baking dish coated with marinara sauce.
- Pour remaining marinara sauce over the shells and sprinkle with remaining mozzarella.
- Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until golden.
