- 1 block extra firm tofu
- 2 tablespoons sriracha
- 1 tablespoon olive oil
- 1 batch cilantro lime rice or Vegan Mexican Rice
- 1 can black beans
- 1 avocado
- 1 red pepper
- 1 orange pepper
- 3 tablespoons corn starch or arrowroot starch
- 1–2 teaspoon coconut sugar or brown sugar
- 1 teaspoon paprika
- 1 1/2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon chili powder
- 1/2–1 teaspoon salt
- 1 batch spicy tahini dressing
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. Press tofu for 5–10 minutes, then cube it.
- 3. Mix spices (coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, salt) in a bowl.
- 4. Coat tofu with olive oil and sriracha mixture; then toss with spice blend.
- 5. Chop and prepare peppers; place on a baking sheet with tofu.
- 6. Bake for 20 minutes; brush remaining sriracha on tofu and bake for another 10–15 minutes until crispy.
- 7. Assemble bowls with rice, beans, roasted veggies, tofu cubes, avocado slices, and drizzle with tahini dressing.
