  • 1 block extra firm tofu
  • 2 tablespoons sriracha
  • 1 tablespoon olive oil
  • 1 batch cilantro lime rice or Vegan Mexican Rice
  • 1 can black beans
  • 1 avocado
  • 1 red pepper
  • 1 orange pepper
  • 3 tablespoons corn starch or arrowroot starch
  • 12 teaspoon coconut sugar or brown sugar
  • 1 teaspoon paprika
  • 1 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/21 teaspoon salt
  • 1 batch spicy tahini dressing

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Press tofu for 5–10 minutes, then cube it.
  3. 3. Mix spices (coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, salt) in a bowl.
  4. 4. Coat tofu with olive oil and sriracha mixture; then toss with spice blend.
  5. 5. Chop and prepare peppers; place on a baking sheet with tofu.
  6. 6. Bake for 20 minutes; brush remaining sriracha on tofu and bake for another 10–15 minutes until crispy.
  7. 7. Assemble bowls with rice, beans, roasted veggies, tofu cubes, avocado slices, and drizzle with tahini dressing.
