  • 8 grams salt

Instructions

  1. In a large bowl, mix water, sourdough starter, and salt until combined. Gradually add flour and mix until blended. Let rest for 30 minutes.
  2. Perform four sets of stretch and folds at 20-minute intervals.
  3. Allow the dough to bulk ferment for 3-4 hours until nearly doubled.
  4. Shape the dough into a tight ball and let it proof in a floured basket for 2 hours.
  5. Preheat your oven to 460°F (238°C) with the Dutch oven inside.
  6. Score the dough and bake covered for 30 minutes; then uncover and bake for an additional 10 minutes until golden brown.
  7. Cool on a rack before slicing.
