Description

Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 small red bell pepper
  • 1 jalapeño
  • 1 cup black beans (drained and rinsed)
  • ¾ cup corn kernels
  • ¼ cup cotija cheese

Instructions

  1. Marinate the diced chicken in lime juice, olive oil, spices, and chipotle for at least 15 minutes.
  2. Cook rice according to package directions while the chicken marinates.
  3. In a skillet, sauté marinated chicken until cooked through (12–15 minutes). Set aside.
  4. Sauté chopped peppers and onions in the same skillet for about 8 minutes; add garlic before combining with the chicken.
  5. Warm tortillas and fill with rice, chicken, veggies, beans, corn, cheese, and sauce before wrapping tightly.
