  • 6 cups cornbread (homemade or store-bought)
  • 6 cups Italian bread (cubed)
  • 1 stick unsalted butter
  • 1 large onion (diced)
  • 4 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 23 cups chicken stock
  • 2 large eggs (beaten)
  • Fresh parsley
  • Poultry seasoning
  • Sage
  • Thyme
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F and spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. Cut the cornbread and Italian bread into small cubes. Dry them by leaving them out overnight or baking at 350°F for about 10 minutes.
  3. In a large sauté pan, melt the butter over medium heat. Add diced onion and celery; cook for about 5 minutes until softened. Stir in minced garlic for an additional 2 minutes.
  4. In a large bowl, combine dried bread cubes with sautéed vegetables, chicken stock (start with 2 cups), parsley, herbs, salt, pepper, and beaten eggs. Adjust moisture as needed.
  5. Transfer to the casserole dish and cover with foil. Bake for 30 minutes covered; then uncover and bake for an additional 20 minutes until golden brown.
