  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 jar (12 ounces) roasted red peppers
  • 1 cup kalamata olives
  • 1 medium red onion
  • 3 tablespoons red wine vinegar
  • 1 tablespoon minced garlic
  • Optional: ½ cup feta cheese for serving

Instructions

  1. Lightly coat the slow cooker with nonstick spray. Heat olive oil in a large skillet.
  2. Season chicken with salt and pepper; brown in the skillet for 1-2 minutes on each side. Transfer to the slow cooker.

  5. Cook on high for 1.5 to 2 hours or low for 3 to 4 hours until chicken reaches an internal temperature of 165°F.
