  • 2 lbs large shrimp (peeled and deveined)
  • 1 Tbsp Old Bay Seasoning
  • 1 Tbsp salt (for cooking water)
  • 2/3 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 1 Tbsp butter (plus extra to grease the pan)
  • 1/2 cup panko breadcrumbs
  • 4 oz shredded mozzarella cheese
  • 4 oz shredded medium cheddar cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 375°F and grease a 2½-quart casserole dish.
  2. Boil water in a large pot, add salt and Old Bay Seasoning, then cook the shrimp for about 30 seconds until opaque. Drain and cool.
  3. In a mixing bowl, combine cooled shrimp with mayonnaise, garlic powder, black pepper, mozzarella, and cheddar cheese; mix well.
  4. Transfer the mixture to the greased casserole dish.
  5. Melt butter and mix with panko breadcrumbs; sprinkle over the shrimp mixture.
  6. Bake uncovered for 13-15 minutes or until the center reaches 145°F; broil briefly for a crispy topping.
  7. Allow to rest for 15 minutes before serving.
