- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon white pepper
- Salt to taste
- Fresh chives (minced)
- Fresh tarragon (chopped)
- Crème fraîche (optional)

Instructions
- In a Dutch oven, melt butter over medium heat. Sauté diced onion and minced celery until softened (about 5 minutes).
- Add minced garlic and cook until fragrant (about 1 minute).
- Sprinkle flour over vegetables and stir constantly for 2 minutes.
- Gradually whisk in warmed milk and seafood stock until smooth.
- Stir in tomato paste, bay leaves, and Old Bay seasoning; let simmer for 5 minutes.
- Add heavy cream and simmer for an additional 5 minutes.
- Introduce shrimp; cook until just pink (3–4 minutes).
- Gently fold in crab meat and sherry; heat through (2 minutes).
- Remove bay leaves, adjust seasonings, and serve hot.
