Ingredients

Scale
  • 1 lb sausage (your choice)
  • 4 medium potatoes
  • 1 cup asparagus
  • 1 small yellow onion
  • 2 cloves garlic
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • Olive oil
  • Dried thyme
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sear the sliced sausage until browned; set aside.
  3. In the same skillet, sauté bite-sized potato pieces until lightly browned (about 8–10 minutes). Add onion and garlic; cook until translucent.
  4. Layer sautéed ingredients and asparagus in the baking dish. Season with thyme, salt, and pepper; pour broth over everything and top with sausage.
  5. Cover with foil and bake for 40–45 minutes until potatoes are tender. Remove foil, add cheese, and bake uncovered for an additional 10 minutes until melted.
