  • Kosher salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups heavy cream
  • Juice and zest of 1 lemon

Instructions

  2. In a skillet over medium-high heat, add olive oil. Sear fillets skin-side up for about 5 minutes until golden brown, then flip and cook for another 5 minutes skin-side down. Remove from skillet.
  3. Lower heat to medium-low; melt butter in the same skillet. Sauté garlic until fragrant.
  4. Stir in flour to form a roux, then gradually whisk in heavy cream until thickened (3–4 minutes).
  5. Add lemon juice, zest, and dill to the sauce. Return salmon to the skillet, spooning sauce over it. Simmer gently for an additional 2 minutes before serving.
