  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives (for garnish)

Instructions

  1. In a large bowl, mix together ground beef, panko bread crumbs, tomato paste, Worcestershire sauce, mustard, onion powder, pepper, and salt until combined. Shape into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat and cook patties for about 3–4 minutes per side until browned. Transfer to a platter.
  3. In the same skillet, sauté diced onions until translucent. Add sliced mushrooms and cook until softened.
  4. Stir in thyme, garlic powder, and flour; cook for one minute. Gradually add beef stock while scraping the pan.
  5. Stir in Worcestershire sauce and bring to a boil; reduce heat and stir in butter until melted.
  6. Return patties to the gravy mixture and simmer for 5–7 minutes until cooked through.
  7. Serve hot with your choice of sides.
