  • 3 leeks
  • 1 rib celery

  • 1 ¼ pounds Yukon Gold potatoes

  • Fresh thyme
  • Bay leaves

Instructions

  5. Bring to a simmer; cover and cook on medium-low for 10-15 minutes until potatoes are tender.
  6. Remove bay leaves and thyme stems; season with salt and pepper.
