Ingredients

Scale
  • 1 cup milk (warmed to 110°F)
  • 2 ¼ teaspoons active dry yeast
  • 2 large eggs
  • 1 teaspoon red gel food dye
  • 4 ¼ cups all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ½ cup unsalted butter (room temperature)
  • 1 cup brown sugar
  • 4 oz cream cheese (room temperature)
  • Powdered sugar

Instructions

  1. Warm milk to 110°F and stir in yeast; let sit for 10 minutes.
  2. In a bowl, combine flour, cocoa powder, sugar, and salt. Blend in cubed butter until pea-sized.
  3. Add milk mixture, eggs, and food dye. Mix until smooth; knead for about 5 minutes.
  4. Let dough rise in a warm place until doubled in size (about 1 hour).
  5. Prepare cinnamon filling by mixing softened butter, brown sugar, and cinnamon until smooth.
  6. Roll out dough into a rectangle; spread the filling evenly and roll tightly into a log.
  7. Cut into rolls and let rise again for 20 minutes before baking at 375°F for about 25-27 minutes.
  8. Make cream cheese icing by mixing cream cheese, butter, powdered sugar, vanilla extract, and milk.
  9. Ice warm rolls immediately after baking.
