  • 1 1/2 cups granulated sugar

  • 1 1/2 cups vegetable oil

  • 2 large eggs, at room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract
  • 1 teaspoon (or more, as needed) purple food coloring
  • 1 pound cream cheese, softened
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar, sifted
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium mixing bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a large mixing bowl, whisk together vegetable oil, buttermilk, eggs, red and purple food coloring, vinegar, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet ingredients. Stir until the batter is smooth and evenly colored. Adjust purple food coloring if needed.
  5. Divide the batter evenly between prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes. Check if done by inserting a toothpick into the center; it should come out clean.
  7. Allow cakes to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. In a large bowl, beat together softened cream cheese and butter with an electric mixer on high speed until smooth and creamy.
