- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
- 1 teaspoon (or more, as needed) purple food coloring
- 1 pound cream cheese, softened
- 2 sticks (1 cup) unsalted butter, at room temperature
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar, sifted
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium mixing bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
- In a large mixing bowl, whisk together vegetable oil, buttermilk, eggs, red and purple food coloring, vinegar, and vanilla extract until smooth.
- Gradually add dry ingredients to wet ingredients. Stir until the batter is smooth and evenly colored. Adjust purple food coloring if needed.
- Divide the batter evenly between prepared cake pans.
- Bake in the preheated oven for 25-30 minutes. Check if done by inserting a toothpick into the center; it should come out clean.
