- 4 cups cooked brown or white rice
- 1 lb boneless, skinless chicken thighs
- 3 tablespoons coconut oil
- ½ yellow onion
- ½ green bell pepper
- ½ red bell pepper
- 1 large garlic clove
- 1-inch piece fresh ginger
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 ½ cups cubed pineapple
- ¾ cup frozen peas
- Juice of 1 small lime
Instructions
- Season chicken with salt and let sit for 10 minutes.
- Heat 2 tablespoons coconut oil in a large skillet over medium heat. Add chicken and cook until no longer pink (5-7 minutes). Remove from pan.
- In the same skillet, melt remaining coconut oil. Sauté onion for 3-4 minutes; add bell peppers, garlic, and ginger; cook for another 2-3 minutes.
- Add soy sauce to deglaze the pan.
- Stir in cooked rice, honey, and pineapple; return chicken to the pan and heat through (5 minutes).
- Stir in peas and lime juice before serving.
