  • 4 pounds multi-colored rotini pasta
  • 64 ounces Italian dressing
  • 2 teaspoons Kosher salt
  • 1 teaspoon black pepper
  • 32 ounces mozzarella cheese, cut into small cubes
  • 40 ounces cherry tomatoes, halved
  • 3 green bell peppers, diced
  • 3 red bell peppers, diced
  • 36 ounces sliced black olives, drained
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook rotini pasta according to package instructions; drain and rinse with cold water.
  2. In a very large bowl, combine half of the cooked pasta with half of the Italian dressing, salt, and pepper; stir well.
  3. Add half of the mozzarella cheese, cherry tomatoes, diced bell peppers, and black olives; mix thoroughly.
  4. Repeat with remaining ingredients.
  5. Store in large foil pans and refrigerate until ready to serve.
