  • 6 skinless, bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups long-grain rice (uncooked)
  • 1 ½ cups chicken or vegetable stock (hot)
  • 1 ¼ cups water (hot)
  • Assorted spices: salt
  • black pepper
  • smoked paprika
  • thyme
  • oregano
  • garlic granules

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a mixing bowl, whisk together olive oil and spices. Add chicken thighs and coat well.
  3. In a baking dish, combine onion, garlic, hot stock, hot water, uncooked rice, salt, and pepper.
  4. Place seasoned chicken on top of the rice mixture.
  5. Cover with foil and bake for 30 minutes; then uncover and bake for another 30 minutes.
  6. Allow to rest for 10 minutes before serving.
