  • 2 lb boneless, skinless chicken breasts
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp avocado oil
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, salt, and pepper.
  3. In another bowl, mix grape tomatoes and mozzarella with salt and pepper.
  4. Heat avocado oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear chicken until golden brown on both sides (1-2 minutes each side).
  5. Pour the sauce over the chicken and add the tomato-mozzarella mixture on top.
  6. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes before serving.
