Instructions

  1. Preheat your oven to 350°F (175°C) and line two 8-inch cake pans with parchment paper.
  2. In a large bowl, whisk together sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until smooth.
  3. Stir in ground almonds, all-purpose flour, baking powder, baking soda, and sea salt.
  4. Gradually mix in the vegan buttermilk until just combined; do not overmix.
  5. Divide the batter between prepared pans and bake for 40–42 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to a cooling rack.
