  • ½ cup buttermilk
  • 1 tablespoon hot sauce
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup frying oil
  • 1 tablespoon brown sugar
  • 1 tablespoon cayenne powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 4 burger buns (buttered and toasted)

Instructions

  1. Slice chicken breasts into thin cutlets and season with salt and pepper.
  2. Mix buttermilk and hot sauce in one bowl; combine flour, cornstarch, and spices in another.
  3. Dredge chicken in flour mixture, dip in buttermilk mix, then coat again in the flour.
  4. Heat oil to 350ºF in a pan; fry chicken cutlets for 3 minutes on each side until golden brown.
  5. Prepare Nashville hot sauce by whisking hot oil with brown sugar and spices; baste fried chicken.
  6. Assemble sandwiches with mayonnaise on buns topped with chicken, coleslaw, and pickles.
