  • ¼ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white miso paste
  • 1 teaspoon Worcestershire sauce (or low-sodium tamari)
  • 1 teaspoon anchovy paste
  • 1 garlic clove, grated or minced
  • Cracked black pepper, to taste
  • ⅓ cup neutral oil (such as avocado or grapeseed oil)
  • 4 large flour (burrito-size) tortillas or whole-wheat wraps
  • 2 romaine hearts, chopped (about 8 cups)
  • 1 cup croutons, roughly chopped
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Slice chicken breasts horizontally to create thin cutlets. Season with Parmesan and spices.
  2. Heat olive oil in a skillet over medium heat. Cook chicken until golden brown and cooked through (internal temp of 165°F).
  3. In a bowl, mix mayonnaise, lemon juice, miso paste, Worcestershire sauce, garlic, and oil for the dressing.
  4. Combine chopped romaine, chicken pieces, croutons, and Parmesan in a large bowl. Toss with dressing.
