  • 85 grams jelly crystals
  • 125 mls cream
  • 12 Tiramisu sponge fingers
  • 1/2 cup port, sherry, or juice (for non-alcoholic)
  • 1 1/2 cups custard
  • 400 grams mixed berries (strawberries, raspberries, blackberries)
  • 200 mls thickened cream
  • 1 teaspoon custard powder
  • Mint leaves for garnish

Instructions

  1. Prepare jelly according to package instructions and pour into dessert glasses. Chill until set.
  2. When jelly is close to setting, beat remaining jelly mixture with cream until fluffy.
  3. Layer the jelly and cream mixture over the set jelly in glasses.
  4. Crush sponge fingers and soak with port or juice; layer on top of the flummery.
  5. Add custard over sponge; layer with chopped berries.
  6. Whip thickened cream with custard powder until stiff peaks form; pipe on top.
  7. Garnish with reserved berries and mint leaves.
