  • 1 cup finely crushed graham crackers
  • 1½ tablespoons granulated sugar (for crust)
  • 3 tablespoons melted butter
  • 16 oz cream cheese
  • ¾ cup granulated sugar (for filling)
  • 1½ tablespoons all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • ¼ cup heavy cream
  • Optional toppings: fresh fruits, chocolate ganache, whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix crushed graham crackers, sugar, and melted butter. Divide evenly into muffin cups and press down to form crusts.
  3. Bake the crusts for 5 minutes; then reduce oven temperature to 325°F (160°C).
  4. In another bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, mixing on low speed after each addition. Stir in vanilla extract.
  5. Pour filling into crusts and bake for 18–23 minutes until centers jiggle slightly.
  6. Cool in the pan for an hour before refrigerating for at least two hours.
  7. Add desired toppings before serving.
