  • 5 guajillo peppers
  • 23 chiles de árbol (optional)
  • 1 tablespoon olive oil

  • 1 tablespoon dried Mexican oregano
  • 3.5 pounds lamb shoulder (or beef)
  • 4 cups beef stock
