- 1 cup heavy whipping cream
- 1/2–1 cup grated Parmesan cheese
- 2 1/2–3 cups fresh spinach

- Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper; cook until browned (4–5 minutes).
- Stir in onions, carrots, celery, sundried tomatoes, and garlic; cook until translucent (3–4 minutes).
- Sprinkle flour over the mixture; stir well. If using tomato paste for extra flavor, mix it in now.
- Gradually whisk in chicken broth while stirring to avoid lumps.
- Bring to a boil; add pasta and remaining seasoning. Cover and simmer for about 20 minutes until chicken is cooked through and pasta is al dente.
- Stir in heavy cream, spinach, and Parmesan cheese; simmer for another 5 minutes.
