- 2 medium zucchini, sliced
- 2 medium yellow squash, sliced
- 4 tablespoons chopped fresh basil
- 2 tablespoons thinly sliced green onion
- 1/2 teaspoon dried thyme
- 3/4 teaspoon garlic powder
- 1 cup grated mozzarella cheese (divided)
- 1/2 cup coarsely grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat the oven to 350°F (180°C). Spray an 8 x 8 or 8 x 11 baking dish with olive oil.
- In a large mixing bowl, combine the sliced zucchini, yellow squash, chopped basil, thyme, garlic powder, half of the mozzarella cheese, and Parmesan cheese. Season with salt and pepper, mixing well.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake uncovered for 25-30 minutes until the vegetables are tender.
