  • 2 large heads of cauliflower
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 2 cups shredded Colby Jack cheese (divided)
  • 8 slices bacon (cooked and crumbled)
  • 4 green onions (sliced)
  • 2 cloves garlic (minced)
  • Salt
  • Black pepper
  • Paprika

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Steam cauliflower florets for 5-7 minutes until tender; drain and pat dry.
  3. In a mixing bowl, combine cream cheese, sour cream, 1 cup Colby Jack cheese, half the bacon, half the green onions, garlic, salt, and pepper; mix until smooth.
  4. Fold steamed cauliflower into the cheese mixture until evenly coated.
  5. Transfer mixture to baking dish; top with remaining cheese, bacon, and a sprinkle of paprika.
