  • 1½ tablespoon corn starch
  • 1/4 cup butter (cold and cubed)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until fluffy. Mix in lemon zest, then add eggs and vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually mix dry ingredients into the wet mixture.
  4. Shape dough into 1-inch balls on lined baking sheets and create an indentation with your thumb.
  5. Prepare lemon curd by whisking together lemon juice, egg yolks, sugar, corn starch, and zest in a saucepan over medium heat until thickened; stir in cold butter.
  6. Fill each cookie indentation with lemon curd and bake for about 10 minutes until edges are lightly golden.
