  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons lemon zest

  • ½ cup vegetable oil
  • 1 ½ cups blueberries (fresh or frozen)
  • 1 tablespoon all-purpose flour (for coating blueberries)
  • ⅓ cup freshly squeezed lemon juice
  • 1 tablespoon granulated sugar (for lemon syrup)
  • 1 cup icing sugar
  • ¼ cup freshly squeezed lemon juice (for lemon glaze)
  • 1 teaspoon vanilla extract (for lemon glaze)
  • Milk, as needed (to adjust glaze consistency)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8.5×4.5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, mix Greek yogurt, sugar, eggs, lemon zest, vanilla extract, and vegetable oil until smooth.
  4. Gradually combine wet ingredients into dry ingredients until just mixed; fold in floured blueberries.
  5. Pour batter into the pan and bake for 50–70 minutes or until a toothpick comes out clean.
  6. While baking, prepare lemon syrup by heating lemon juice and sugar until dissolved.
  7. After cooling slightly in the pan, poke holes in the loaf and soak it with syrup.
  8. Create the lemon glaze by mixing icing sugar with lemon juice until smooth; drizzle over cooled loaf.
