  • 2 cups shredded low moisture mozzarella
  • 2 tablespoons cream cheese
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 tablespoon grated parmesan
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon parsley

Instructions

  1. Melt mozzarella and cream cheese together. In a bowl, mix melted cheese with eggs, almond flour, and baking powder until smooth.
  2. Chill the dough for at least 4 hours to firm up.
  3. Divide the dough into eight balls and flatten each between parchment paper.
  4. Preheat oven to 350°F (175°C). Bake flattened dough for 15–17 minutes until golden brown.
  5. In a pan, melt butter and olive oil; add minced garlic until fragrant.
