- 1 tablespoon avocado oil
- 1 ¼ pounds boneless, skinless chicken breasts
- ⅓ cup honey
- 2–3 tablespoons sriracha
- 2 medium zucchini
- 1 medium summer squash
- 1 ½ cups shredded carrots
- 2 cups cooked rice (or quinoa)
- 1 medium avocado
Instructions
- Preheat oven to 400°F (200°C).
- Heat avocado oil in a cast iron skillet over medium-high heat. Sear chicken for about 5 minutes on each side until browned.
- In a bowl, whisk together honey, sriracha, garlic, salt, pepper, and optional spices. Set aside some sauce for later.
- Remove chicken and sauté zucchini and summer squash for 1-2 minutes in the skillet.
- Layer shredded carrots over the veggies, place chicken on top, and coat with the hot honey sauce.
- Transfer skillet to the oven and bake for about 15 minutes until chicken is cooked through.
- Switch to broil for an extra 3-5 minutes for caramelization.
