Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. For the crust and topping, mix flour, oats, salt, and baking soda in one bowl; in another bowl, combine melted butter, brown sugar, and vanilla. Combine both mixtures and press into the pan.
  3. Bake crust for 10 minutes. Meanwhile, whisk together sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla for the filling.
  4. Pour the lemon filling over the baked crust, crumble reserved dough on top, and bake for an additional 17-20 minutes until set.
