- ⅓ cup melted coconut oil
- ½ cup honey or maple syrup

- ½ teaspoon fine-grain sea salt

Instructions
- Preheat your oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
- In a large bowl, whisk together melted coconut oil and honey. Add eggs and mix until smooth.
- Stir in milk, baking soda, cinnamon, salt, and nutmeg.
- Fold in squeezed grated zucchini and gradually add flour until just combined.
- Pour batter into the loaf pan and sprinkle with cinnamon.
- Bake for 55–60 minutes until a toothpick comes out clean.
- Allow cooling in the pan before slicing.
