- 1½ cups grated zucchini
- 2 large eggs
- ¼ cup avocado oil (or olive oil)
- ⅓ cup maple syrup
- 2 teaspoons vanilla extract
- ⅔ cup unsweetened applesauce
- 1¼ cups whole wheat flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ⅓ cup chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- Squeeze excess moisture from the grated zucchini using a clean towel.
- In a bowl, whisk together zucchini, eggs, oil, maple syrup, vanilla extract, and applesauce until well combined.
- Add flour, cocoa powder, baking soda, baking powder, cinnamon, and salt to the wet mixture. Stir until just combined.
- Gently fold in chocolate chips.
- Fill muffin cups about ¾ full with batter and sprinkle additional chocolate chips on top if desired.
- Bake for 18–20 minutes until a toothpick comes out clean. Cool in the tin for 10 minutes before transferring to a wire rack.
