  • 3 cups broccoli florets
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • 1 tablespoon peanut oil (or vegetable/olive oil)
  • 2 tablespoons cornstarch + 2 tablespoons cold water
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 12 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
  • 3 cups cooked rice (any kind)

Instructions

  1. In a small bowl, mix cornstarch with cold water; set aside.
  2. Combine beef broth, soy sauce, brown sugar, honey, garlic, ginger, and sesame oil in another bowl; set aside.
  3. Heat oil in a large skillet over medium heat. Cook broccoli for 4-5 minutes; remove from pan.
  4. In the same skillet, cook ground beef and onions until browned. Add bell pepper; cook for an additional minute.
  5. Pour in the prepared sauce and bring to a boil. Stir in cornstarch mixture and let simmer until thickened.
  6. Return broccoli to the pan and combine everything well. Serve hot over rice.
