  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips (dark or milk)

Instructions

  1. Preheat your oven to 160ºC (320ºF) with fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt chopped chocolate and butter in a heatproof bowl set over simmering water. Stir occasionally until smooth, then mix in the vanilla.
  3. In another bowl, whip together eggs and sugars using an electric whisk until light and fluffy.
  4. Sift flour, cocoa powder, baking powder, and salt into a separate bowl; fold in chocolate chips.
  5. Gradually combine the melted chocolate mixture with the egg mixture, then gently fold in the dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray, spacing them apart. Bake for 12–14 minutes until set but soft in the center.
  7. Cool on the tray for about 10 minutes before transferring to a wire rack.
