- 95g all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 225g dark chocolate, chopped
- 56g butter, salted or unsalted
- 2 eggs, room temperature
- 100g caster sugar
- 90g demerara sugar
- 1 teaspoon vanilla extract
- 85g dark or milk chocolate chips
Instructions
- Preheat oven to 160ºC (320ºF) for fan ovens or 170ºC (338ºF) for conventional ovens. Line a baking tray with parchment paper.
- Melt dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and stir in vanilla.
- Beat eggs with caster and demerara sugars using an electric whisk until light and fluffy.
- Sift together flour, cocoa powder, baking powder, salt, and chocolate chips in another bowl.
- Fold the melted chocolate mixture into the egg mixture gently, then fold in dry ingredients until just combined.
- Scoop tablespoon-sized portions onto the baking tray, spaced apart. Bake for 12–14 minutes until crackly on top.
- Allow to cool on the tray for about 10 minutes before transferring to a wire rack.
