- 3 tablespoons butter, melted
- 1 ½ cups crushed Oreo cookies
- 2 pounds cream cheese, at room temperature
- ¼ cup sour cream, at room temperature
- 1 ¼ cups sugar
- 4 large eggs, at room temperature
- 1 teaspoon vanilla extract
- ¼ cup heavy cream
- 9–10 Oreo cookies, cut into small pieces
- 2 ounces semisweet chocolate, for ganache
- ¼ cup heavy cream, for ganache
Instructions
- Preheat the oven to 325ºF (165°C) and prepare a 9-inch springform pan with foil at the bottom and butter on the sides.
- Mix crushed Oreos with melted butter, pressing firmly into the bottom of the pan. Bake for 10 minutes or chill if using a no-bake option.
- In a bowl, beat cream cheese until smooth; add sour cream and sugar gradually. Mix in eggs one at a time along with vanilla extract and heavy cream until fully combined.
- Pour the batter over the crust, sprinkle with chopped Oreos, and gently press them down.
- Bake for 10 minutes at 325°F then reduce to 300°F (150°C) for an additional hour until slightly jiggly in the center.
- Turn off the oven and let it cool inside for about an hour before cooling completely on a wire rack.
- Refrigerate wrapped in plastic for at least 8 hours before serving. Prepare ganache by heating heavy cream and pouring it over chopped chocolate; stir until smooth.
- Drizzle ganache over chilled cheesecake before serving.
