  • 1 small sweet onion
  • 1 cup shredded carrots
  • 3 garlic cloves
  • 1 small head cabbage (8 cups shredded)
  • Soy sauce or tamari
  • 2 tablespoons olive oil, divided
  • ¼ cup chicken broth
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add ground turkey and cook until almost done (5-6 minutes).
  2. Push the turkey to one side and add remaining olive oil and diced onion. Cook for 3-4 minutes.
  3. Stir in shredded carrots, garlic, and ginger; cook for an additional 2 minutes.
  4. Pour in chicken broth and scrape up any browned bits from the skillet.
  5. Stir in cabbage, soy sauce, rice vinegar, salt, and pepper. Cover and cook on medium-low for 12-15 minutes until cabbage is tender.
  6. Remove from heat and stir in toasted sesame oil before serving over rice if desired.
